ZUCCHINI FRITTERS

Cups of Flour
1 Egg
2 Teaspoons of Baking Powder
1 Cup of Milk
¾ Teaspoon of Salt (or less)
1-1/2 Cups of Shredded Zucchini
In
a bowl, lightly beat egg; Add milk to egg and blend. Add flour,
baking powder, salt and mix well. Add Zucchini and mix altogether.
Let stand a few minutes as you heat oil in frying pan. If you
want a thinner pancake, pour small amount in oil and use a spoon
to spread out the center. Cook both sides till nice and brown.
